Copycat True Foods’ Charred Cauliflower

Makes 4 servings. 


1 medium cauliflower, cut into florets

Olive oil

1 tablespoon fresh Dill, chopped

1 tablespoon fresh Mint, chopped

1 tablespoon tahini

1 tablespoon harissa

1 tablespoon maple syrup

1/2 teaspoon garlic powder

2 dates, chopped

Handful of pistachio nuts

Juice of a lemon

Handful of chopped chives

½ cup chopped parsley

½ tsp of oil. Avocado or coconut oil is preferred

Salt & pepper to taste


Preheat the oven to 400 degrees.

Line a baking sheet with parchment paper.

Place the cauliflower pieces onto the basking sheet and toss or spray the cauliflower with the olive oil. Season with salt and pepper and roast for 20-25 minutes.

Create the sauce by mixing the lemon juice, harissa, syrup and garlic powder.

Once the cauliflower is charred from the roasting, cover it the sauce and mix well. Sprinkle with dates, pistachios, dill and mint.
